The incipient revision of the Franciacorta Production Regulations has introduced specifications and limits that, for the first time in the world, regulate and formalise the chromatic specifications of Franciacorta Rosè. Together with Fulvio Mattivi and Davide Camoni, we retrace the history of the activities that have enabled us to give scientific substance to one of the most fascinating aspects of oenology, the study of the chromatic nuances of wines. The development prospects and impact of 'pink oenology' are therefore manifold, requiring in-depth technical skills ranging from the study of biochemistry and optics to the sensory sciences and neurosciences.
