Description
Sandrine Jégou has a PhD in Food Science and is currently a lecturer at the University of Reims Champagne-Ardenne, in the Oenology Laboratory. She teaches courses in oenology, beerology and plant biotechnology at the Faculty of Science and the Institut Georges Chappaz de la Vigne et du Vin en Champagne. Her various R&D experiences in the brewing, cereals and oenology industries have enabled her to acquire expertise in the biochemistry of macromolecules, mainly proteins and enzymes, in physical chemistry and functional properties in the context of winemaking processes and must and wine quality management.
