Aroma Scalping and Preservation in Sparkling Wines: The Critical Impact of Closure Choice

In this presentation, several original research works will be presented regarding the impact of closure choice on the evolution of sparkling wines both in tirage and expedition scenarios. Part I - Aroma scalping by sparkling wine closures - (Anna Bortolini, PhD student, University of Udine) In the first part, Ms. Bortolini will present the results of her research work with different materials regarding the absorption of aromas associated with sparkling wines both in model and in real wine conditions. Part II - Aroma evolution during tirage with different closures (Francisco Campos, PhD, Research Manager for Sparkling Wines, Amorim Cork) In the second part, Dr. Campos will present the latest results of the aroma evolution of Champagnes and other sparkling wines under different closures (capsules and cork stoppers)
