The aromas of Chardonnay sparkling wines: established knowledge and new perspectives

Found on every wine-growing continent, Chardonnay is one of the most widely planted white grape varieties in the world, giving rise to a wide variety of wine styles. In particular, it is used in many sparkling wines, notably Champagne. Its aromatic characteristics vary widely depending on the soils and climates in which it is grown, as well as the types of vinification used. Although a few molecular markers have been identified in connection with certain olfactory nuances, the origin of its uniqueness remains largely unknown.
This conference will review what is known about the molecular basis of the aroma of sparkling Chardonnay wines and present the results of recent research into the contribution of sulphur compounds to the aroma of Champagne wines, in relation to oenological practices.
