Description
After studying chemistry at the Ecole Normale Supérieure (Paris), he joined the University of Bordeaux
to do a doctorate in oenology. His thesis, supervised by Prof. Denis Dubourdieu and defended
in 2010, focused on the molecular basis of sweetness in dry wines.
In 2013, he was recruited as a lecturer in oenology at the Institut des Sciences de la Vigne
et du Vin.
Since 2020, he has been University Professor of Oenology and Deputy Director of the UMR Oenologie.
He is in charge of the DUAD and various continuing education courses, and teaches tasting, winemaking and winemaking techniques.

Alongside these academic duties, he has been an oenology consultant since 2016, in association
with Valérie Lavigne and Christophe Ollivier for a number of estates in Bordeaux and elsewhere.
