Virginie Thollin has a degree in Agri-food Industry from Montpellier and a Diplôme National d'Oenologue from the University of Reims Champagne-Ardenne. She is a bubble enthusiast, she worked for different types of sparkling winemaking: traditional method, ancestral method, “pétillants naturels”... in different regions of France. She worked as a commercial oenologist and an oenology referent in R&D for Pe.DI France. She developed unique skills about the aging of lees, a crucial and misunderstood step for sparkling winemaking.
