Description
The magic of sparkling wines lies largely in the bubbles that dance in the flutes and goblets of consumers the world over. These bubbles are the result of the pressure of CO2 in the bottle, caused by the formation of foam. This effervescence is refined with bottle ageing, which gradually reduces the CO2 pressure in the bottle.
The winemaker then has several levers at his disposal to modulate the effervescence of his wines, in a way controlling the size of the bubbles and the longevity of the effervescence.
